Warm Onion Pie for the Olsons in SLC
Mix 1 cup crushed Saltine crackers (or 1 cup bread crumbs with 1 teaspoon salt) with 4 Tablespoons melted butter. Press into the bottom of greased 9-inch pie plate and up the sides. Set aside
3 cups diced sweet onion
4 Tablespoons of butter
2 cups Swiss cheese, finely shredded
1 Tablespoon flour
1 teaspoon salt
1/4 teaspoon cayenne pepper
3 eggs, well beaten
1 cup milk, scalded
Saute onions in 4 Tablespoons butter, slowly, stirring frequently until golden. Remove from hear and drain. Carefully pour over crust in shell. Combine the Swiss cheese, flour, salt, and cayenne pepper. Scald milk and stir in eggs. Add to cheese and flour mixture. Mix together and then pour over onions. Bake in preheated 350 degree oven for 30-40 minutes or until golden. Serve warm.
